Brewer's yeast 0.67 tsp (2 g)
Fine salt 1 tsp (5 g)
For the Sausage Filling
Luganega sausage 0.6 lb (250 g)
Parmigiano Reggiano PDO cheese 2.1 oz (60 g) - to grate
Red wine 1 tbsp (15 ml)
Wild fennel 1 tsp (5 g)
Garlic 1 clove
Extra virgin olive oil to taste
Black pepper to taste
For the Flavorful Mushroom Pan
Champignon mushrooms 5.7 cups (400 g)
Garlic 1 clove
Grana Padano PDO cheese 1 ½ tbsp (20 g) - to grate
Breadcrumbs 4 spoonfuls
Parsley 1 tuft
Oregano to taste
Chives to taste
Extra virgin olive oil to taste

Bread Strudel Stuffed with Sausage

To prepare the bread strudel stuffed with sausage, start with the dough: place the sifted flour in a bowl (as an alternative to manitoba flour, you can use all-purpose flour). Then divide the water dose and dissolve the yeast in half 1. Add the teaspoon of malt (or sugar) 2 and mix to combine the ingredients. In the other half of the water dissolve the salt 3.

Then add the yeast and malt dissolved in water to the bowl with the flour 4, then also pour in the water in which you dissolved the salt 5. Add the olive oil last 6.

Then begin kneading in the bowl 7, transfer the dough to a floured surface and work the dough until it is smooth and elastic. Then place it in a bowl 8 and cover it with microwave-safe plastic wrap, then put the bowl in the Samsung Smart Oven and set the automatic leavening program 1-3 (max weight 900 g), the dough will double in volume 9.

While the dough is rising, prepare the filling: in a large pan, sauté the minced garlic with the oil 10.
