Parmigiano Reggiano PDO cheese 1.1 oz (30 g) - to grate
Extra virgin olive oil 1 ½ tbsp (20 g)
Eggs 1 - medium
Fresh scallion 1
Garlic 1 clove
Chives 5 - threads
Baking soda 1 pinch
Fine salt to taste
Black pepper to taste
For the yogurt sauce
Greek yogurt 0.4 cup (100 g)
Whole milk ¼ cup (50 g)
Chives 5 - threads

How to prepare Pea fritters with yogurt sauce

To prepare the pea fritters with yogurt sauce, start by cleaning the scallion: remove the green part of the stem 1, the roots, and the outermost tough layer. Then cut it into thin slices 2. In a pan, heat a little oil and add the scallion 3,

add a peeled and whole garlic clove 4 and sauté over low heat, stirring occasionally to avoid burning. When the scallion has softened, add the peas to the pan 5, add salt 6 and pepper
