How to prepare Cocoa gaufre with mandarin cream
To make the cocoa waffles with mandarin cream, start by preparing the latter. Wash the mandarins and use a peeler to remove the zest 1. Put a saucepan on the stove with the milk 1, add the mandarin zest 3, cover with a lid, and bring to a boil. Turn off the heat and let it infuse covered for at least 1 hour.
In the meantime, in a separate bowl, beat the egg yolks with the sugar 4 and the cornstarch 5. Mix well with a whisk 6 until you get a homogeneous mixture.
