How to prepare Mozzarella and Ham in Carrozza

To prepare mozzarella and ham in carrozza, cut the mozzarella into thin slices 1. In a plate, break 3 eggs, season with salt and pepper 2, and beat them with a fork 3.

Cut out 8 square slices of bread approximately 4.72 inches 4, if you find pre-sliced bread even better. Fill each slice with mozzarella 5 and cooked ham 6.

Close with another slice of bread 7 and gently flatten the edges. Now pass first in flour 8, then seal well all the edges in the egg 9.

Then cover the entire bread with the egg 10. Finally, bread in the breadcrumbs mix 11. You will obtain 4 pieces 12 with these quantities.

Heat the oil to a temperature of 320°F and gently immerse one piece at a time 13. After about 3 minutes, turn the mozzarellas in carrozza and let them brown well for another minute 14. Drain them on paper towels 15. Serve the mozzarellas and ham in carrozza immediately!

How to store

We recommend consuming the mozzarellas and ham in carrozza immediately. You can store them in the fridge for a few hours before frying.

Make sure to properly coat the edges with eggs and then breadcrumbs to seal the mozzarellas in carrozza well. This way, you will prevent the gooey mozzarella from leaking out. Alternatively, you can use buffalo mozzarella or fior di latte; in this case, you must drain the cheese thoroughly until it has released all its whey.

The flour in the breading serves as a binder for the egg and breadcrumbs. It is essential to drain the bread slices well from the egg to avoid lumps when passing them in the breadcrumbs. For the same reason, it’s important to have clean hands during the breading process.
