- Type 00 flour 2 ¾ cups (350 g)
- Butter 1 cup (230 g) - (softened)
- Sugar 0.6 cup (120 g)
- Egg yolks 2
- Vanilla bean 1
- Lemon peel 1
- Fine salt 1 pinch
How to prepare Strawberry Pinwheels
To prepare the strawberry pinwheels, start by making the dough. First, take the vanilla bean and cut it horizontally with a knife to extract the seeds 1. In a mixer, add the softened butter 2 and start to whisk it together with the sugar, salt, vanilla bean seeds, and lemon zest 3.
Next, add the two egg yolks 4 and whisk until the mixture is fluffy. Sift the flour, add it gradually to the mixture with a spoon 5, and mix the ingredients well until you get a soft but rather firm dough. Then, using a spatula, spread the mixture on a tray lined with parchment paper 6.
