- Ingredients for a 20 cm mold
- Type 00 flour 2 ½ cups (300 g)
- Sugar 0.9 cup (180 g)
- Butter 7 tbsp (100 g)
- Strawberries 1 ½ cup (240 g)
- Eggs 3.9 oz (110 g) - (about 2 medium)
- Powdered yeast for sweets 3 ½ tsp (16 g)
- Lemon juice ½
How to prepare Soft Strawberry Cake

To prepare the soft strawberry cake, first wash the strawberries and remove the stem 1. Transfer them to a tall, narrow container, add the lemon juice 2, blend with an immersion blender 3 and set aside.

Melt the butter over low heat and let it cool. Pour the eggs into a large bowl and start beating them with an electric mixer, gradually adding the sugar 4. You should obtain a light and frothy mixture 5. At this point, sift in both the flour 6,

and the baking powder 7. Mix them into the batter, stirring gently with a spatula from bottom to top and also clockwise 8. Add half of the strawberry puree 9

and stir again with the spatula 10. Then add the melted cool butter 11 and continue mixing until you obtain a smooth and homogeneous mixture. Butter a springform pan with a diameter of 8 inches and pour the batter inside 12.
