- Butter 4.5 oz (125 g)
- Sugar ½ cup (100 g)
- Egg yolks 2 - medium
- Fine salt 1 pinch
- Vanilla bean ½
- For the water icing
- Powdered sugar 1 ¼ cup (150 g)
- Water 2 spoonfuls - hot
- Food coloring to taste - red, green, blue, yellow, black
How to prepare Easy sweet shortcrust pastry rings
To prepare the Olympic rings cookies, start with the Shortcrust pastry: cut half a vanilla bean and extract the seeds with the blade of a small knife 1. Place the sifted flour, cold butter, vanilla bean seeds 2, and a pinch of salt 3 in the mixer.
Then blend everything 4 and pour the resulting mixture onto a work surface, forming the classic fountain shape. Pour the sugar in the center 5 along with the 2 egg yolks 6.
Briefly knead the shortcrust pastry 7 and shape it into a dough ball 8 that you can wrap in plastic wrap 9 and place in the refrigerator to firm up for at least 30 minutes.
After the necessary time has passed, roll out the pastry to a thickness of about 1/4 inch 10 and create circles with a 4-inch pastry cutter 11. Then make the hole with another 2.5-inch pastry cutter 12 (you can re-knead the excess pastry to make more rings).
You will thus obtain the ring shape 13; once ready, you can place them on a baking sheet lined with parchment paper, keeping them relatively close together 14, and bake in a preheated static oven at 350°F for about 15 minutes (320°F for about 10 minutes in a fan oven). Once cooked, remove from the oven 15 and let them cool.
Meanwhile, prepare the water icing: pour the powdered sugar into a small bowl and gradually add the hot water 16, mixing with a teaspoon to obtain a fluid mixture 17. Divide it into five small bowls 18, as many as the colors of the Olympic rings.
Color each bowl by adding the necessary amount of liquid food coloring: red 19, black 20, green, blue, yellow 21.
Now, simply brush the surface of the rings, alternating the different colors 22 and using a flat wooden spatula, being careful not to overflow 23. Let the Olympic rings dry on a cooling rack 24 and then serve them for an original snack!
