INGREDIENTS

Batter for 14-15 crepes, 18 cm diameter
Eggs 2
Type 00 flour 1 ½ cup (200 g)
Milk 2 cups (500 g)
Extra virgin olive oil 1 tbsp (15 g)
Salt 1 pinch

How to prepare Crepe without butter

To prepare crepes without butter, pour the whole eggs into a bowl 1 and beat them with a whisk 2. Gradually pour in the milk 3.

Add a pinch of salt 4 and the extra virgin olive oil 5, continuing to mix with the whisk 6.

Now incorporate the sifted flour through a sieve, a little at a time 7, always mixing with the whisk to avoid lumps and obtain a smooth and homogeneous batter 8. Pour a little oil into a pan with a diameter of approximately 7 inches 9.

Remove any excess oil with a kitchen paper 10. Pour a ladle of batter 11 to cover the bottom 12.

Storage
