How to prepare Apple and Chocolate Cake

To prepare the apple and chocolate cake, first tackle the apples. Cut them into wedges 1, remove the core 2, and peel them 3.

Now cut the apples into half-inch slices 4, to obtain 1.5 lbs. Divide the apples into two different bowls, putting about 30 slices in one for decoration and the remaining ones in the other 5. Pour the orange juice into both bowls 6.

Stir them to prevent oxidation 7 and set them aside. Coarsely chop the dark chocolate 8, melt the butter, and let it cool down. In a bowl, add the eggs and sugar 9.

Beat with an electric whisk until you get a light and frothy mixture 10. Add the cooled melted butter 11 and work until fully absorbed. Also add the all-purpose flour 12.

Add the baking powder 13 and mix with the whisk on low speed until well incorporated 14. Finally, add the salt and mix again 15.

Add the apples to the batter (still keeping aside the 30 slices for decoration) and mix with a spatula, trying not to break them 16. Line a 9-inch springform pan with parchment paper and pour half of the batter into it 17. Level with a spoon and place the chopped chocolate on top 18.

Pour the remaining batter over 19, level again with the spoon 20, and decorate with the reserved apple slices, arranging them in a radial pattern 21.

Sprinkle with the 1 oz of granulated sugar 22 and bake in a preheated static oven at 355°F for 70 minutes. Always do the toothpick test before removing the cake from the oven 23. Then let it cool before removing it from the mold 24 and dust the cake with powdered sugar before serving it.

Storage

The apple and chocolate cake keeps for up to 2 days under a glass dome. Once baked, you can also freeze it.

Tip
