Avocado toast

Breakfast or lunch? This Hamlet-like doubt afflicts sleepyheads and the undecided, but there's only one answer: brunch! The avocado toast recipe is a must to make this moment truly special, especially on weekends, when you wake up too late for breakfast and too early for lunch. Avocado toast can be based on sandwich bread, brioche, or as in our case a slice of toasted homemade bread, on which to spread a soft avocado cream, to be garnished with ingredients of your liking! The most beloved version is undoubtedly the one with avocado, eggs, and salmon, but you can customize the toppings by experimenting with new combinations, both sweet and savory. Some examples? Ham, red onion, and fresh cheese, or strawberries, honey, and mascarpone, or even, hummus and sun-dried tomatoes for a vegetarian variant. INGREDIENTS

Homemade bread 4 slices
Smoked Salmon 4 slices
Extra virgin olive oil to taste
For the avocado cream
Avocado 1
Lemon juice ½ - lemon
Fine salt to taste
Black pepper to taste
For the poached eggs
Eggs 4
White wine vinegar 1 ½ tbsp (20 g)
For garnishing
Lemon peel to taste
Thyme to taste
Extra virgin olive oil to taste

How to prepare Avocado toast

To make the avocado toast, start with the avocado cream: cut the avocado in half 1 and remove the pit 2, then scoop out the pulp and transfer it to a bowl. Add the lemon juice to prevent it from browning 3.

Mash the avocado with a fork until it becomes a cream 4, then adjust with salt 5 and pepper. Cover with cling film in contact and store in the fridge until use 6.

Move on to the bread: heat a drizzle of oil in a pan 7, then place the slices of bread 8 and toast them on both sides. Set aside 9.

Now prepare the poached eggs: pour water into a pot, add the vinegar 10 and heat until it boils. Lower the flame and create a vortex with a spoon 11, then gently slide in an egg that you have cracked into a separate bowl 12. Cook for 3-4 minutes, without touching it.

Once the egg white has coagulated around the yolk, drain the poached egg with a slotted spoon 13 and transfer it onto a tray. Proceed in the same way with all the other eggs 14. You are ready to assemble your toast: spread the slices of bread with the avocado cream 15.

Add a slice of smoked salmon 16 and lay the poached egg on top, being careful not to break it 17. Finally, garnish with a few thyme leaves, a drizzle of oil, and some grated lemon zest: your avocado toast is ready to be enjoyed 18!

How to store

It is recommended to consume the avocado toast immediately.

Tips

As an alternative to slices of homemade bread, you can use brioche bread or sandwich bread, including wholemeal.

If you want, you can add a spicy note with fresh chili pepper or Tabasco!
