INGREDIENTS

For the blinis
All-purpose flour ⅔ cup (80 g)
Instant yeast for salted preparations 1 tsp (5 g)
Eggs 1
Whole milk ⅓ cup (100 g) - + 1 tbsp
Fresh liquid cream 3 ½ tbsp (50 g)
Fine salt to taste
Black pepper to taste

Caviar 3 ½ tbsp (50 g)
Lime peel 1 - zest
Lime juice ½

How to prepare Blinis with caviar

To prepare the Blinis with Caviar, first start with the blini batter. Separate the yolk from the egg white 1. In a bowl, beat the egg whites with a whisk 2 until they form stiff peaks 3, then set them aside.

Now, using the same electric mixer, beat the yolk with the milk 4 and the cream 5. Gradually add the flour 6 and continue to mix.

Combine the previously sifted yeast 7, blending it into the rest with a whisk. Then add salt 8. Now gently fold in the beaten egg whites, a little at a time, being very careful not to deflate them, mixing with a spatula from the bottom up 9.

Once you achieve a smooth mixture 10, proceed to cooking. Lightly grease a non-stick pan with a bit of butter 11. Pour a small ladleful of batter for each blini 12.

Let it cook for about 2-3 minutes 13, then flip to the other side and continue cooking for another 2-3 minutes 14 until golden brown 15.

Store the ready-made blinis on a serving platter 16. Now, move on to the filling: season the shrimp with salt, oil, pepper 17, and the lime zest 18. Set aside.

Now cut the avocado in half, remove the pit 19, and with a spoon scoop out the flesh into a bowl 20. Squeeze the juice of half a lime 20 and mash with a fork. Season with salt 21.
