To make the upside-down peach and amaretti cake, place the softened chopped butter and granulated sugar in the bowl of a stand mixer fitted with a whisk 1, turn on the whisk to mix the ingredients and obtain a cream, then add the eggs 2, the seeds of the vanilla bean, the sifted flour, and baking powder 3.
Pour the milk in a thin stream 4 while the machine is running. Wash, peel the peaches 5 and cut them into wedges 6.
Distribute the caramel at the bottom of a 11-inch diameter fluted pan 7, butter and lightly flour the fluted edge before arranging the peach slices in a sunburst pattern in the pan 8 and then sprinkle the surface with the crumbled amaretti 9.
At this point, pour the cake batter over the peaches, level it with a spatula 10 and bake in a static oven at 350°F for 45 minutes (or in a convection oven at 320°F for 35 minutes). Once baking is complete, remove the pan from the oven 11, let it cool, and then flip it onto a serving plate. Your upside-down peach and amaretti cake is ready to be enjoyed 12!
