How to prepare Sweet Potato Pancakes
To make the sweet potato pancakes, first, boil the sweet potato for about 20 minutes 1, or until it is soft. Then drain it 2 and peel it 3.
In a bowl, add the eggs along with the milk 4, add the cooked sweet potato 5, and blend everything with an immersion blender 6.
until you get a smooth, lump-free mixture 7. Then add the sugar 8 and the baking powder 9.
and the flour 10. Blend again with the mixer 11 until you get a thick and smooth batter 12.
Grease a non-stick pan with a little butter 13 and heat it on the stove. Once it's hot, pour a ladle of batter 14; it will spread on its own, creating the classic pancake shape 15.
As soon as small bubbles appear on the surface 16, it's time to flip the pancakes 17. Cook them on the other side until they are golden underneath. Then, as you cook them, transfer the pancakes to a serving plate 18.
Once you have cooked your pancakes, lightly clean the pan and put it back on the stove. Place the bacon slices and cook them until they are crispy 19, turning them occasionally. Once the bacon is crispy, chop it with a knife 20 and serve the sweet potato pancakes with maple syrup and crispy bacon 21, or with your preferred toppings!
