Listening to the album Pearl by the raspy and warm voice of Janis Joplin and her famous, albeit excessive, love for whiskey inspired today's recipe. It is sauteed prawns with figs and mint, an enveloping and intriguing late summer appetizer, just like the warm vocal timbre of the singer. Marinating in whiskey, preferably Southern Comfort, Janis's favorite, allows the prawns to soak up precious fruity notes of orange and peach and then irresistible spices like vanilla and cinnamon. In short, your taste buds will really start to dance seductively when tasting this special appetizer. Feel free to call it a tribute to the great singer of the beautiful '70s, here is our recipe for sauteed prawns with figs and mint!
To prepare the sauteed prawns with figs and mint, let's start with cleaning them. Just remove the back, legs, and shell. Then, make a shallow cut along the back and remove the intestine (the black thread) with a toothpick. Place them in a bowl as you go and then sprinkle with Whiskey, letting them marinate for a few minutes. Heat a non-stick pan well and quickly cook the well-drained prawns. Season with salt, white pepper, and a few drops of Tabasco. Remove them from the pan, add some mint sprigs, and let them rest covered with the lid, so they remain soft. In the pan used for the prawns, instead, place the 8 figs cut into quarters and the butter: caramelize the fruits well, being careful to turn them without ruining them. Once seared, carefully remove them from the pan and set them aside, deglaze the bottom with orange juice. Now you can think about plating which can take a gourmet route. "Smear" 4 plates with a bit of Greek yogurt and arrange 4 prawns, 8 fig wedges, a few pieces of carasau bread (trying to make them stand "up"), and a few more mint sprigs in each; complete with the fig glaze.
