INGREDIENTS
Eggs 5.3 oz (150 g) - (about 3 medium)
Sugar ½ cup (85 g)

Potato starch 2 tbsp (15 g)
Prune jam 1 cup (250 g)
Preparation

How to prepare Jam Swirls

To prepare the jam swirls, start with the sponge cake. In a bowl, pour the whole eggs 1 and sugar 2. Beat well with electric whisks 3

You should obtain a light and homogeneous batter 4. Then mix the flour and potato starch 5 and, by sifting them, add them to the mixture 6

Gently mix with a spatula 7 to incorporate the dry ingredients 8. Pour the batter into a 12x16 inch baking tray lined with parchment paper, and level it well with a spatula 9. Bake in an oven set to 100% steam mode at 212°F for 12 minutes.

When the sponge cake is cooked 10, take it out of the oven and immediately flip it over 11, removing the parchment paper 12. Let it cool at room temperature.

When it is cool, spread the jam over the entire surface 13 and roll it up tightly 14. Then, to tighten it better, help yourself by wrapping it in plastic wrap 15

Tighten the ends well and place it on a tray 16. Let it chill in the fridge for 2 hours. After the necessary time has passed, remove it from the plastic wrap and cut slices about 1.2 inches thick 17. Your jam swirl is ready to be served 18.

Storage

The swirls can be stored in the refrigerator for a couple of days. You can freeze them after baking.

Advice

If you want to give an aromatic touch to the batter, you can enrich it with lemon zest or vanilla seeds.
