Preparation

How to prepare Omelette with Monk's Beard

To prepare the omelette with monk's beard, start by cleaning the monk's beard: remove the reddish end 1 and wash the monk's beard carefully under running water 2, then boil it in a pot with salted water for about ten minutes. Drain it well, place it on a cutting board, and cut it into rough pieces 3, leaving the strands still quite long.

Cut the primosale into not too small cubes 4 and the speck into strips 5. In a bowl, beat the eggs 6.

Now add the monk's beard 7, the Grana Padano 8, the primosale 9,

and the bacon 10. Mix all the ingredients with a fork, then salt and pepper 11.  Put the oil in a pan and heat it 12,

when it's hot, pour in the mixture 13 and cover with a lid 14. Cook for about ten minutes over medium-low heat and then, using the lid, flip the omelette, turning it over and letting it slide back into the pan. Let it cook for another 5 minutes on the other side without the lid 15. The omelette with monk's beard is ready; you can serve it as a main course or cut it into cubes if the omelette with monk's beard will be used to enrich a buffet appetizer.

Storage

The omelette with monk's beard can be stored in the refrigerator for two days, closed in an airtight container.
