For the fried anchovies
Anchovies 1.1 lbs (500 g) - (already cleaned and headless)
Type 00 flour to taste
Fine salt to taste
Peanut seed oil to taste - (for frying)

Greek yogurt 0.6 cup (150 g)
Garlic 1 clove
Lemon juice 1 spoonful
Dill to taste
Extra virgin olive oil to taste

Arugula 5 cups (100 g)
Cherry tomatoes 1 ½ cup (200 g)
Cucumbers 1
Taggiasca olives 4 tbsp (50 g) - pitted
Lemon juice to taste

How to prepare Fried Anchovies

To prepare the fried anchovies, start with the fresh salad: peel the cucumber 1 and cut it into cubes 2. Wash and halve the cherry tomatoes 3.

In a bowl, combine the arugula 4, cucumbers 5, cherry tomatoes, and pitted Taggiasca olives 6.

Dress the salad with a drizzle of extra virgin olive oil, lemon juice 7, salt, and pepper to taste. Gently mix to blend the flavors and keep it chilled 8. Now, prepare the yogurt sauce: peel and chop the garlic clove 9.

Chop the dill as well 10. In a bowl, pour the Greek yogurt, chopped garlic, dill, and season with lemon juice 12.

Season to taste with oil 13, salt 14, and pepper. Stir to thoroughly combine all the ingredients 15.
