Type 00 flour 0.4 cup (50 g)
Water 4 ½ tbsp (70 g)
Poppy seeds 10 tbsp (85 g)
Fine salt to taste
Type 00 flour to taste - for flouring the cherry tomatoes
Peanut seed oil 2.1 cups (500 g) - for frying
For the Black Rice Sheets
Rice flour 4 tbsp (35 g) - Artemide or Venere

Preparation

How to prepare Decadent Caprese

To prepare the decadent caprese, start with the black rice sheet dough. In a bowl, combine the white flour with the Artemide or Venere rice flour 1 and mix them together 2. Then add the salt and 1 tsp of oil 3

And finally the water 4, and mix. As soon as the dough reaches a sufficient consistency, transfer it to a work surface lightly dusted with black rice flour 5 and knead for 5-6 minutes creating folds.
