PRESENTATION
If you're on the hunt for a sweet treat that mixes British comfort food with a healthy twist, sugar-free mini plumcakes are spot on. These little delights are moist and aromatic, thanks to chopped dates and apples. The citrusy burst? Fresh orange zest and juice. Really wakes it up. While traditional English baking roots itself in sweet breads and cakes, this healthy plumcake recipe jumps into today’s trend for sugar-free baking. And, you know, the result is a batch of low-sugar mini cakes that don’t skimp on flavor. Seriously good.
Using dates as a sweetener isn't just a swap—dates bring a chewy, rich bite that reminds you of sticky toffee pudding. But, without all the sugar. Apples blend in perfectly, offering that taste of classic British cakes but with a twist. By switching refined sugar for fruit, these cakes stay sweet and tender, pretty much what everyone wants in diabetic-friendly desserts today. Every bite hints at orange—making these mini plumcakes way way different from typical loaf cakes.
People often think sugar-free means dry or bland. But these cakes? Soft and fresh. They are just right for breakfast or a quick snack. And the size? Perfect. Some folks even say these sugar-free mini plumcake treats can stand up next to fancier desserts. That's impressive for something focused on simple, healthy ingredients. Whether you’re into low-calorie baking or just want a new mini plumcake recipe for your stash, this one hits all the marks—tasty, easy to enjoy, and just different enough to make baking feel fresh again. Honestly, play around with the fruit or zest, or swap in your favorite flour. And see how creative you can get while keeping things light and snackable. And the sauce? Optional, of course.

How to prepare Sugar-free mini plumcakes
To prepare the sugar-free mini plumcakes, first wash the apples, then set aside half covered with plastic wrap for the final decoration. Peel and slice the remaining apples into slices about 1/8 inch thick 1 and place them in a large bowl. Grate the zest of an untreated orange and set aside 2; then squeeze the juice from this grated orange and another one 3.
From the squeezed orange juice, use 3.5 oz for the batter by pouring it into the bowl with the apple slices 4 and set aside the remaining juice: it will be used to brush the plumcakes once baked. Mix the apples well with the orange juice 5 and set aside. Place the pitted dates in a tall, narrow container 6,
add the previously washed raisins 7, the vegetable oil 8, the milk 9
and the grated orange zest 10, then blend with an immersion blender 11 until you obtain a smooth and uniform cream 12.
Transfer the obtained cream into a bowl, add the egg 13, a pinch of salt, and mix with electric beaters 14. Sift the flour and baking powder into the bowl 15
and continue mixing the batter with electric beaters to combine everything 16. At this point, add the apple slices flavored with orange juice 17 and incorporate them into the batter by mixing with a spatula 18.
Oil 19 and flour 6 mini plumcake molds of 2.75x1.5 inches and 1.75 inches in height, then fill them with the batter up to 0.5 inches from the edge 20. Garnish the surface with the reserved half apple, peeled and sliced 21, and bake in a preheated static oven at 350°F for about 25 minutes.
Meanwhile, pour the reserved orange juice into a saucepan 22 and reduce over medium heat for 2-3 minutes 22. Once baked, remove the mini plumcakes from the oven and let them cool, then remove them from the mold and brush them with the reduced orange juice 23. Your sugar-free mini plumcakes are ready to be enjoyed 24!
