PRESENTATION
Tagliata alle erbe aromatiche is, I gotta say, a super tasty slice of Italian cuisine that really puts great ingredients front and center. This herb-crusted steak hails from northern Italy and focuses on a prime cut of beef—usually scamone. It's celebrated for its tender and juicy qualities. Plus, the beef gets a quick rub with olive oil and fresh herbs like rosemary, thyme, and maybe a bit of sage, giving it that aromatic kick Italians really love. Here's the thing: the real trick is to sear the meat briefly. Keep it perfectly pink inside so every bite stays moist and flavorful.
In Italy, this dish is often paired with simple sides like baked veggies or potato boats stuffed with cheddar and pancetta. These sides soak up the extra juices from the grilled beef with herbs. In regions like Lombardy or Veneto, you'll often find tagliata served on big wooden boards, sliced to showcase how succulent the meat is. Seriously good. It’s a dish that comes together quickly—no complicated steps, just straightforward techniques that let the beef and herbs shine.
That’s the heart of an Italian steak recipe: keep it simple, make it tender, and let those Mediterranean flavors be, you know, different. Pairing this with some crispy roasted potatoes or a mix of grilled zucchini and peppers enhances the meal, making it even more satisfying. People who enjoy quick beef recipes or want something special without much hassle will find this dish perfect for both weeknights and relaxed weekends.
You get all the fresh taste associated with classic Mediterranean cuisine, where less is really more and every bite is like a little celebration of good, honest food. Whether you're hosting a dinner party or simply want a cozy meal at home, this aromatic herb steak is an easy win that brings a slice of northern Italy right to your table. So next time you're in the mood for a steak dinner with a twist, and look, give this Italian steak recipe a try and enjoy a taste of Italy in your own kitchen. Pretty much.

How to prepare Sliced Beef with Aromatic Herbs
To make the sliced beef with aromatic herbs, cut the rump steak to obtain a 500 g slice about 1.5-2 inches thick (1-2). Meanwhile, prepare the herb mixture that will flavor the sliced beef: remove the woody part of the rosemary leaving only the needles, place them on a cutting board, add sage leaves, marjoram, thyme, and parsley 3, finely chop the herbs with a knife.
Place the obtained mixture in a bowl, season with salt 4, freshly ground black pepper 5, and olive oil 6, mix the obtained emulsion and use it
to brush the slice of meat on both sides 7. Proceed with cooking the sliced beef: put a grill on the stove, sprinkle the surface with coarse salt 8. When the grill is hot, place the slice of meat: to achieve perfect cooking, cook on both sides for a maximum of 3-4 minutes, turning it with a spatula 9. By cooking for only a few minutes, the steak will remain pink inside and retain all its juices; it is recommended not to extend the cooking time, otherwise the meat will be too dry inside.
Once cooking is completed 10, place the still-hot meat on a cutting board and cut it into slices about 0.4 inches thick 11. Serve immediately the sliced beef with aromatic herbs while still hot and accompany it with tasty sides like Potato boats with cheddar and bacon 12 or, if you prefer a lighter side, serve it with a mixed salad.
