How to prepare Savory puff pastry rolls with pomegranate

To prepare the savory puff pastry rolls with pomegranate, the first thing to do is handle the pomegranate: cut it in half 1, deseed it 2, and blend the seeds with an immersion blender 3.

Until you obtain a homogeneous mixture 4 which you will then strain 5 to obtain only the juice 6.

Transfer the pomegranate juice into a small pot, add the balsamic glaze 7, and let it reduce over low heat, stirring often 8. Then transfer it into a small bowl and let it cool 9.

Crumble the chestnuts with your hands 10, add the thyme leaves, the Parmesan cheese 11, mix well 12, and set aside.

Unroll the puff pastry and brush it with the pomegranate reduction 13. Lay about half of the ham on top 14 and brush again with the reduction 15.

Place the cheese slices on top 16, the remaining ham 17, and about half of the chestnut and Parmesan mixture 18.

Season with black pepper 19 and roll up the pastry from the longer side 20. Divide the roll into 12 pieces 21.

Transfer the rolls onto a baking sheet lined with parchment paper and press them down slightly with your hands 22. Brush the surface with the beaten egg 23 and sprinkle with the chestnut and cheese mixture 24.

At this point 25 bake in a preheated static oven at 392°F for about 25-30 minutes until they are golden brown. Remove from the oven 26 and serve your enticing savory puff pastry rolls with pomegranate 27!

Storage

Once cooked, it is advisable to consume the rolls immediately. Alternatively, they can be stored in the refrigerator and warmed before serving.

If you prefer to freeze them, you can do so before brushing them with the egg.

Tip

Add chopped dried figs to the filling instead of the chestnuts!
