Tuna 7.1 oz (200 g) - (flash frozen)
Vegetable oil 2 spoonfuls - sesame
Soy sauce 2 spoonfuls
Fresh scallion 0.4 oz (10 g)
Fresh chili pepper 1
Rice vinegar 1 spoonful
For the Guacamole
Avocado 1
Green Peperoncino 1
Cluster tomatoes 1
Shallot 0.4 oz (10 g)
Lime juice 2 tsp (10 g)
Extra virgin olive oil 1 ½ tbsp (20 g)
Black pepper 1 pinch
Fine salt 1 pinch
For Filling
Crescenza cheese 3.5 oz (100 g)
Preparation

How to prepare Poke temaki wrap

To prepare the poke temaki wrap, take the chili pepper and remove the stem. Then remove the seeds inside 1 and chop it 2. Finely chop the green part of the scallion as well 3.

Take the fresh tuna (make sure it has been flash-frozen upon purchase and follow the instructions at the end of the recipe for proper use and consumption of raw fish); first cut it into strips 4, then into 3/4-inch cubes 5, and place them in a small bowl. Dress with sesame oil 6,

soy sauce 7, rice vinegar 8, chili pepper 9;

also add the green part of the scallion 10 and mix 11, cover with plastic wrap 12 and let it marinate in the fridge for at least 2 hours. Once the indicated time has passed, take it out and let it sit at room temperature for about half an hour.

In the meantime, prepare the guacamole: cut the avocado in half, remove the pit 13 and scoop out the flesh with a spoon 14. Squeeze the juice of one lime 15

and drizzle the avocado flesh with the juice obtained 16. Then peel and chop the shallot 17, wash and finely chop the vine tomato 18

and finally trim and chop the green chili pepper 19. Pour all the ingredients into the bowl with the avocado (20-21),

Cut the two flatbreads in half 25, heat them in a pan for about 2 minutes 26, then take the crescenza cheese and spread it over the entire surface of the half flatbread 27.

Shape the flatbread into a cone 28 and place it in a glass to conveniently add the other ingredients, then pour in 1 teaspoon of guacamole into the cone 29. Remove the plastic wrap from the bowl with the marinated tuna 30, stir

and add it to the flatbread 31, then garnish to taste with some crescenza cheese 32 and continue until the ingredients are used up. Your poke temaki wrap is ready to be served 33!

Storage

It is recommended not to store the poke temaki wrap but to consume it immediately.

Guacamole can be stored for 1-2 days in an airtight container in the fridge.

Tip

Instead of crescenza cheese, you can use crème fraiche (How to make sour cream) and white and black sesame seeds to give an extra touch of the East!
