How to prepare Orecchiette with aromatic herbs
To prepare orecchiette with aromatic herbs, finely chop the herbs 1. In a small bowl, pour the softened butter 2 and work it into a cream with a spatula 3.
Add the finely chopped aromatic herbs to the butter 4, salt 5, and pepper to taste, then mix the ingredients 6.
Once the cream is homogeneous 7, set it aside covered with plastic wrap and boil the orecchiette in plenty of salted water to taste 8. Drain them while still al dente (keep a glass of cooking water aside). Combine the orecchiette with the prepared seasoning 9
and mix everything well with a spatula 10, add the grated pecorino 11, incorporate it well, and if the pasta is too dry, add a few tablespoons of cooking water. Serve the orecchiette with aromatic herbs hot, garnishing the serving plates with a few sprigs of aromatic herbs 12.
