- Baguette 5.5 oz (160 g) - (2 of 80 g each)
- Gruyere cheese 9 oz (250 g)
- Smoked pancetta 2.8 oz (80 g)
- for the béchamel
- Whole milk 1.67 cups (400 g)
- Butter 3 tbsp (40 g)
- Flour 4 tbsp (30 g)
- Nutmeg 1 pinch - (to be grated)
- Fine salt to taste
How to prepare Croque baguette
To prepare the croque baguette, start by making the béchamel. Heat the milk, without bringing it to a boil. In a saucepan, melt the butter 1 and then add the flour 2, stirring quickly for a couple of minutes 3.
When the roux has reached a golden color, add the warm milk 4 and stir over medium heat, adding the salt 5 and nutmeg 6.
Continue stirring 7 until your béchamel has thickened, then transfer it to a bowl 8. Take the bacon and cut it into small strips 9.
Grate the Gruyère into julienne strips 10 and set everything aside. Take the baguettes, cut them in half lengthwise 11, as if to fill them, and remove the internal crumb 12.
Repeat this process for both halves of the baguettes 13, and fill the cavities created with the béchamel 14. Cover with plenty of Gruyère 15,
