- Nesquik 4 ½ tbsp (40 g)
- Whole milk 0.3 cup (75 ml)
- Type 00 flour 0.4 cup (50 g)
- Eggs 2
- Baking powder ¾ tsp (4 g)
- Fine salt 1 pinch

- White chocolate 1 ½ cup (250 g)
- Nestlé condensed milk ¼ cup (60 ml)
- Whole milk 1 cup (250 ml)
- Type 00 flour ¼ cup (30 g)
- Gelatin in sheets 0.3 oz (8 g)
How to prepare Blinis with Nesquik and white chocolate cream
To prepare the Nesquik blinis with white chocolate cream, start with the cream: pour the cold milk into a small saucepan 1, then add Nestlé condensed milk 2 and mix everything with a whisk 3.
Add the sifted flour 4 and continue mixing with the whisk to dissolve the flour and avoid lumps 6. Now move the saucepan to the stove and bring the milk to a simmer, continuing to stir the mixture with the whisk 6
Meanwhile, soak the gelatin in cold water for about 10 minutes 7; after the necessary time, squeeze the gelatin well and add it to the mixture 8, stirring to dissolve it completely. At this point, add the coarsely chopped white chocolate 9 and
continue working with the whisk 10 until the chocolate is completely melted and the cream has reached a creamy and fairly firm consistency. Transfer the prepared white chocolate cream to a bowl 11, let it cool at room temperature, then store it in the refrigerator for at least two hours with a sheet of cling film touching the surface 12.
Now move on to the preparation of the blinis batter: separate the egg yolks from the whites and keep them aside, and work them in a bowl with an electric mixer or a hand whisk 13, pouring the cold milk in a thin stream 14. Continue beating until a homogeneous and frothy mixture is obtained 15.
Add the dry ingredients to the yolk and milk mixture, sifting them: first the flour 16, then the baking powder and salt 17, and finally the Nesquik 18.
Continue working the mixture with the whisk, starting at the lowest speed 19, until all the ingredients are well combined 20. Cover the bowl with cling film and place the yolk and Nesquik mixture in the refrigerator to rest for at least 1 hour 21.
Whip the egg whites with a mixer or stand mixer and beat them until stiff peaks form (22-23). Add the whipped egg whites to the yolk and Nesquik mixture 24 and
gently fold them in with a spatula, mixing from bottom to top to avoid deflating them 25. In the end, you will obtain a homogeneous and fairly fluid and frothy mixture. Melt the butter in a preheated non-stick pan (or crepe pan) 26, so the blinis do not stick, then take a spoonful of batter at a time (about 0.5-0.7 oz) and pour it onto the pan 27.
Form small circles with the batter by letting it drip from the tip of the spoon and keeping it always in the center, so as to obtain perfect circles 28. Let them cook for about 1 minute, then flip your blinis to the other side and cook for another 1 minute 29. Once ready, place the blinis on a flat plate to cool slightly, and continue in this way until all the batter is used 30.
Move on to decorating the blinis: transfer the white chocolate cream into a piping bag and squeeze a tuft of cream onto each blinis, following the edge shape 31. Complete the decoration by placing your preferred berries in the center (32-33) and finishing with a fresh mint leaf.
