INGREDIENTS
Ingredients for 700 grams of ice cream
Yogurt 2.1 cups (500 ml)
Fresh liquid cream ½ cup (125 ml)
Whole milk ½ cup (125 ml)
Sugar ½ cup (120 g)
Glucose 2 tsp (10 g)
Carob seed powder 1 tsp (5 g)

How to prepare Yogurt Ice Cream

To prepare the yogurt ice cream, pour the cream and milk into a saucepan, add the sugar 1, glucose 2, and locust bean gum 3 then stir to dissolve all ingredients: bring the mixture to 176-185°F, then, once it reaches the indicated temperature, immediately place the saucepan in an ice water bath to quickly lower the temperature. Cover the saucepan with a lid and refrigerate well for at least two hours.

When the mixture is well chilled, add the yogurt 4 (also very cold), stir to combine the ingredients, then place everything in the ice cream maker 5 and churn for at least half an hour or until the ice cream is creamy and very thick 6. Pour the ice cream into a container with a lid and freeze for at least three to four hours.

Storage

Yogurt ice cream can be kept in the refrigerator in an airtight container for up to 1 week.
