Sweet and sour green beans

PRESENTATION

We prepared them fried and with crunchy crumbs, but today we want to show you how to prepare sweet and sour green beans! An easy and quick side dish to prepare, perfect for the summer, it goes well with many meat and fish main courses. All you have to do is blanch the green beans for a few minutes and quickly sauté them in a pan with oil, sugar and vinegar. Once cooked, they will be tender and covered with a delicious sweet and sour sauce. The combination of sugar and vinegar will give a very special taste to your green beans, we are sure you will appreciate them very much!

INGREDIENTS
Green beans 1.33 lbs (600 g)
Extra virgin olive oil 3 tbsp (40 g)
Brown sugar 2 tbsp (30 g)
Pine nuts 2 ½ tbsp (20 g)
Apple cider vinegar 3 tbsp (40 g)
Fine salt ½ tbsp (10 g)

How to prepare Sweet and sour green beans

To prepare the sweet and sour green beans, first make sure to clean them well. Remove the side tips 1 and wash them well under running water 2. Boil them in lightly salted water for 12-15 minutes 3. The exact cooking time will depend on their size.

When they are tender, drain them and immerse them in cold water 4. Drain them well and transfer them to a pan with the oil 5. Sautee them with brown sugar 6.

Deglaze with the apple cider vinegar 7 and add a pinch of salt 8. Let the sauce thicken, stirring occasionally, then turn off the heat 9.

Separately in a pan toast the pine nuts over low heat 10. Pour the green beans into a salad bowl 11, add the pine nuts 12 on top and let them cool before serving.

Storage

Green beans can be kept for a maximum of 3 days in the refrigerator.

Tips

Use small and tender green beans.

The doses of vinegar, sugar, salt and honey are indicative and depend on your personal taste. You can increase or decrease them as desired for a more acidic or sweeter flavor. If you prefer, you can replace vinegar with balsamic vinegar or lemon and brown sugar with normal sugar or honey.
