Sugar ½ cup (90 g)
Cornstarch 7 tbsp (55 g)
Powdered turmeric 1 pinch
Vanilla extract 1 tsp
Lemon peel to taste - organic
Preparation

How to prepare Vegan custard

To prepare the vegan custard, pour the sugar 1, cornstarch 2, and a pinch of turmeric, just the tip of a teaspoon 3 into a saucepan.

Also add the vanilla extract and mix the powders with a hand whisk 4. Gradually add the rice milk, stirring continuously to avoid lumps 5. Place the saucepan on the stove over low heat and continue stirring 6.

Add the zest of half an organic lemon 7, being careful not to include the white part, which is very bitter. Stir for 2 minutes 8, then remove the lemon peel with a strainer 9.

Continue cooking, stirring until the cream is almost boiling 10. At this point, turn off the stove and continue stirring during the first minutes of cooling 11. Transfer the custard to a bowl 12, and the vegan custard is ready. You can use it immediately or cover it with cling film and store it in the fridge.

Storage

Vegan custard can be stored in the refrigerator for up to 3 days.

Tip

By slightly increasing the amount of cornstarch, you can obtain a firmer cream suitable for filling.
