INGREDIENTS
- For 2 red popsicles
- Datterino tomatoes 1 cup (140 g)
- Tabasco® 5 drops
- Basil to taste
- Extra virgin olive oil to taste
- Fine salt 1 pinch
- For 2 green popsicles
- Cucumbers ½ cup (100 g)
- Lemon juice 3 ½ tbsp (50 g)
- Fresh ginger 0.5 oz (15 g) - (cleaned)
- Lemons 1 slice
- Extra virgin olive oil to taste
- Fine salt 1 pinch
- Black pepper to taste
How to prepare Savory popsicles
To prepare the savory popsicles, first, prepare the syrup required for both flavors. In a saucepan, place the water and sugar 1 and bring to a boil 2. Remove immediately from the heat and let it cool. Move on to the first of the two flavors: wash the cherry tomatoes and cut them in half 3.
Place them in the blender cup 4 and blend them with an immersion blender 5 until you get a puree 6.
Strain it through a fine mesh sieve to remove the seeds 7. Then add the extra virgin olive oil 8 and a pinch of salt 9.
Add the Tabasco 10 and the previously prepared syrup in a thin stream 11, always stirring. For convenience, transfer the mixture into a small jug, and distribute it in 2 popsicle molds of 24 oz capacity each, in which you have previously placed the appropriate sticks 12.
Now distribute the basil leaves into the molds, making them sink well into the mixture 13. Transfer your cherry tomato popsicles to the freezer, where they should remain for at least 6 hours. Then move on to the second type of popsicles. Cut 4 thin slices of cucumber and keep them aside (they will be used for decoration) 14, peel the remaining part 15
and cut the flesh into pieces 16. Transfer it to the blender cup 17; then take the lemon, divide it in half, and take 2 quarters of slices for decoration. Squeeze the rest of the lemon to extract the juice 18,
to be added to the cucumber pulp 19 and blend to obtain a puree 20. Strain it through a fine mesh sieve 21.
Then add the remaining syrup (about 2.5 oz) 22, extra virgin olive oil 23, and a pinch of salt 24.
Clean the ginger 25 and cut it into pieces the size of garlic cloves, so you can squeeze it with a garlic press 26, to extract a juice to add to the mixture. Finally, season with pepper 27 and mix.
Place the cucumber and lemon slices inside the popsicle molds 28. Also transferring the mixture into a jug to simplify the operation, pour the cucumber, ginger, and lemon puree into the molds 29 and transfer them to the freezer for at least 6 hours. After the freezing time, unmold your savory popsicles 30 and enjoy them immediately!
