PRESENTATION

If you’re on the hunt for an easy and tasty appetizer, you might wanna check out mortadella puffs from Italy’s Emilia-Romagna region. Really good stuff. These bite-sized treats are wrapped in golden puff pastry and filled with slices of mortadella and a generous amount of Emmental cheese, plus a sprinkle of pistachio granules on top. This combo is super crispy on the outside and tender and moist inside, with a nice little crunch from the nuts—making each bite a delight for your taste buds. Puff pastry is pretty popular in this region because it’s easy to work with. And look, it's perfect for whipping up mortadella appetizers when last-minute guests pop by or when you want a variety of snacks. And here's the thing: the pink of the mortadella and the green pistachios make these look super fancy without any extra effort.

Plus, there's a lot of flexibility with mortadella puff pastry snacks. In Emilia-Romagna, folks love experimenting with different fillings. Some versions go with prosciutto and Asiago cheese, adding a sharper, more tangy flavor compared to the sweet and mild taste of Emmental with mortadella. The key—no question—is balancing the creamy cheese, savory cold cuts, and that light crunch in every bite. If you are eager to try more mortadella recipes, this one is a fantastic starting point. It’s quick, pretty simple, and ends up as delicious little puff pastry appetizers perfect for any buffet or happy hour. With these mortadella and cheese puffs, you've got something that fits all kinds of gatherings. And truthfully, nobody needs to know how fast they are to make. Just cut, fill, fold and bake—soon enough, you’ll have golden snacks ready to enjoy. How to prepare Mortadella Puffs

To prepare the mortadella puffs, start by making the filling. Finely chop both the mortadella 1 and the cheese 2 with a knife. Then take the pastry and slightly flatten it with a rolling pin 3.

From this, first cut 4 strips about 3x10 inches 4, and then cut from these strips rectangles about 3x3.5 inches (5-6).

Place 1 teaspoon of cheese 7 and 1 teaspoon of mortadella 8, previously chopped, in the center of each rectangle. Then brush the edges of the rectangle with the slightly beaten egg yolk 9.

At this point, fold them into a triangle shape, applying slight pressure with your fingers 10. Again, brush the edges and the center of the triangles with the egg 11 and add pistachio crumbles to decorate your mortadella puffs 12.

Bake in a preheated oven at 355°F for 15 minutes 13, ensuring you cover them with aluminum foil to prevent the pistachio crumbles from darkening too much 14. Serve the mortadella puffs freshly prepared, or even at room temperature 15!

Storage

Mortadella puffs are best consumed freshly made. Alternatively, they can be stored in the refrigerator for up to one day. Freezing is not recommended.

Tip

Get creative by changing the shape of your puffs and fill them with a different filling, made with any type of cold cuts or cheese!
