- Potatoes 1.5 lbs (700 g) - starchy
- Type 00 flour 1.6 cups (200 g)
- Spinach 4 ½ cups (400 g)
- Fine salt to taste
- For the taleggio sauce
- Taleggio cheese 7 oz (200 g)
- Fresh liquid cream 1.1 cups (250 ml)
- Fine salt to taste

and add the taleggio cut into pieces 4 and let it melt over low heat, then let it thicken slightly, add ground white pepper 5, adjust salt if necessary, and turn off the heat. Then boil the dumplings in plenty of salted water 6,
