Brown sugar ½ cup (100 g)

Amaretti cookies 1.5 oz (40 g)
for the green apple cream
Green apples 1 lb (450 g)
Water 0.8 cup (200 g)
Sugar 6 ½ tbsp (80 g)
Agar agar 1 oz (3.5 g)
for the pink grapefruit cream
Pink grapefruits 1.65 lbs (750 g)
Water 5 tbsp (70 g)
Sugar 5 tbsp (60 g)
Agar agar 0.7 tsp (3.5 g)
Preparation

How to prepare Apple and Grapefruit Glasses

To prepare the apple and grapefruit glasses, start with the apple puree. Prepare the syrup: pour water and granulated sugar into a pot 1 and let it melt, it will take a minute, then turn off the heat and add the agar-agar 2, stir continuously to avoid lumps, and let it cool 3.

In the meantime, wash and dry the apples, cut them in half, and remove the core 4. With a melon baller, make small balls of pulp 5 and drop them into acidulated water (to make it, just squeeze a lemon into a container with cold water) to prevent them from turning brown. In another container, collect what is left from the apples and pour it into the blender 6,

add the syrup 7 and blend until you get a smooth and homogeneous mixture 8. Divide the mixture into 6 glasses, filling each with about 2.8 oz of mixture 9. Place the glasses in the refrigerator and let them set for 30 minutes.

In the meantime, focus on the grapefruit puree, so prepare the syrup again by pouring water and granulated sugar into a small pot 10; let it dissolve, then turn off the heat and add the agar-agar, stirring to prevent lumps 11; let it cool. Storage
