Tiramisu Spheres



  • 1 egg yolk
  • 1 whole egg
  • 30g (2 tablespoons) sugar
  • 1/2 teaspoon vanilla extract
  • 200g (about 7 ounces or 3/4 cup + 1 tablespoon) mascarpone cheese
  • 1 sheet of gelatin
  • 100ml (a little less than 1/2 cup) of cream, whipped to soft peaks
  • Ladyfinger biscuits, as needed
  • Coffee, unsweetened


  1. Mix the egg yolk, whole egg, sugar, and vanilla extract together. Heat the mixture to 82°C (180°F) in a double boiler.

  2. Add the softened gelatin sheet. Let the mixture cool down.

  3. Blend the cooled mixture, then add the mascarpone cheese and blend again.

  4. Gently fold in the softly whipped cream.

  5. Briefly dip the ladyfingers in unsweetened coffee. Arrange them on a plate or your preferred serving dish.

  6. Cover with the cream mixture.

  7. Refrigerate for a while before serving.
