Soft Cake with Vanilla Custard Cream

INGREDIENTS

- For the cake:

  • 4 eggs
  • 1 cup sugar (200 g)
  • 5 tablespoons vegetable oil (70 ml)
  • 2/3 cup sour cream (150 g)
  • Vanilla extract to taste
  • 1 2/3 cups all-purpose flour (200 g)
  • 1 packet (1 tablespoon) baking powder

- For the custard:

  • 1 cup milk (250 ml)
  • 1 egg
  • 3.2 tablespoons sugar (40 g)
  • 1 tablespoon cornstarch

PROCEDURE

Prepare the custard by whisking 1 egg with sugar and cornstarch. Mix well and then gradually add the milk. Cook over low heat, stirring continuously. Let it rest.

In a separate bowl, prepare the cake batter. Whisk together 4 eggs, sugar, vanilla, and baking powder. Blend in the oil and sour cream. Sift in the flour and add more vanilla. Pour the mixture into a cake mold and use the custard to create diamond shapes on top.

Bake at 345°F (175°C) for 20 minutes.
