Potato Pizza Tart



  • 3 potatoes, thinly sliced (about 2mm or 1/16 inch)
  • 1 onion, cut into julienne strips
  • Salt and pepper to taste
  • 1 tablespoon of semolina flour (about 10g)
  • 1/2 tablespoon of oregano
  • 1 sheet of puff pastry
  • Egg for brushing
  • 3.5 ounces (about 1/3 cup) of tomato
  • 5.3 ounces (about 2/3 cup) of mozzarella


  1. Prepare the potatoes: In a bowl, mix the sliced potatoes and onion with salt, pepper, semolina flour, and oregano. Spread on a baking sheet and bake in a preheated oven at 365°F (185°C) for 30 minutes.

  2. Create the base: Allow the potatoes to cool completely. Place a sheet of puff pastry over the potatoes, prick it with a fork, and brush with beaten egg.

  3. Final broil: Bake again until the surface becomes crisp. After turning, spread tomato over the base, add mozzarella, and broil until the cheese becomes golden and bubbly.

  4. Serve: Your potato tart is ready to be enjoyed, crisp and delicious.
