Chocolate Peanut No-Bake Biscuit Cake

Ingredients

  • 1 egg
  • A pinch of salt
  • 1/4 cup of sugar (50g)
  • 1 teaspoon of vanilla extract (3g)
  • 2 tablespoons of all-purpose flour (10g)
  • 2 tablespoons of cornstarch (10g)
  • 2 cups of milk (500ml)
  • 1/4 cup (or 4 tablespoons) of butter (50g)
  • About 9 oz (250g) of dry biscuits (your choice)
  • 5 oz (about 3/4 cup) of milk chocolate chips or pieces for the icing (150g)
  • 1/2 cup of heavy cream for the icing (100ml)
  • 1 cup of crushed peanuts for the icing (100g)

Procedure

In a bowl, whisk together the egg, sugar, vanilla, flour, and cornstarch.

Gradually mix in the milk.

Cook the mixture over medium heat until it boils, stirring constantly.

Once thickened, remove from heat, add the butter, and stir until melted.

Let the cream cool, stirring occasionally. 

In a dish, lay down a layer of biscuits.

Spoon a layer of vanilla cream over the biscuits.

Continue layering biscuits and cream, ending with the cream.

Gently heat the heavy cream without boiling it.

Take off the heat and stir in the milk chocolate until fully melted.

Stir in the crushed peanuts.

Pour the chocolate-peanut icing over the last layer of cream.

Refrigerate the cake until the icing sets before serving.
