Chicken Breast with Mashed Potatoes and Kale



For the Chicken Breast:

  • 8.8 oz (250g) chicken breast
  • Butter
  • Thyme
  • 1 clove of garlic

For the Mashed Potatoes:

  • 4 potatoes
  • 5 tablespoons (approx 2/3 cup) (150ml) milk
  • 2 tablespoons (30g) butter
  • Salt

For the Kale:

  • 7 oz (200g) washed kale
  • Garlic
  • Olive oil
  • Red pepper flakes
  • Salt and pepper


  1. Chicken Breast:

    • Sauté the chicken breast in a pan with a bit of butter for 5 minutes per side.
    • Flavor with thyme and a clove of garlic.
    • Transfer to the oven and cook at 195°F (90°C) for 15 minutes.
  2. Mashed Potatoes:

    • Bake the potatoes in a preheated oven at 355°F (180°C) for 40 minutes.
    • Cut them in half and let them dry out a bit in the oven.
    • Mash/press through a sieve and season with warm milk, butter, and salt.
  3. Kale:

    • Sauté the washed kale in a pan with garlic, olive oil, red pepper flakes, salt, and pepper until it becomes tender.
