Apple Cream Dessert

Ingredients

  • 2 hollowed-out apples
  • 150g (about ? cup) of apple pulp
  • 10g (about 2 teaspoons) + 30g (about 2 tablespoons) of butter
  • ¼ teaspoon of cinnamon
  • 1 whole egg + 4 egg yolks
  • 30g (about 2 ½ tablespoons) of sugar
  • 70g (about 2.5 ounces) of white chocolate
  • Sugar for caramelization

Procedure

  1. Melt 10g (about 2 teaspoons) of butter in a pan, add the apple pulp and cinnamon. Cook for 10-15 minutes until the apples are soft, then blend into a puree.
  2. In a pot, mix 1 whole egg, 4 egg yolks, 30g (about 2 ½ tablespoons) of sugar, and the apple puree. Cook over low heat until it reaches 180°F to obtain a custard.
  3. Off the heat, incorporate 70g (about 2.5 ounces) of white chocolate and 30g (about 2 tablespoons) of cold butter, stirring until smooth.
  4. Fill the hollowed-out apples with the obtained cream and let cool in the fridge for at least 2 hours.
  5. Sprinkle sugar on the surface and caramelize with a kitchen torch. Serve cold.
