Grilled chicken breasts and appetizing vegetable crudités, to be varied according to your personal taste and the availability of the season. This delicious dish is complemented by a tasty dressing. This flavorful chicken salad is the perfect recipe for a healthy and appetizing meal!
- Chicken breast 1.35 lbs (600 g) - fillets
- Green olives 2 ¼ tbsp (30 g) - pitted
- Fermented cucumbers ½ cup (60 g)
- Red peppers 1.35 cups (200 g)
- Celeriac 1.65 cups (170 g)
- Carrots 1 ½ cup (150 g)
- Gruyere cheese ½ cup (100 g) - (or Edam cheese)
- Fine salt to taste
How to prepare Tasty chicken salad
To prepare the tasty chicken salad, start by beating the chicken slices with a meat tenderizer 1, do it between two sheets of baking paper so that you can break down the fibers of the meat without tearing it. Then cook on a hot grill 2 and turn only when the meat is completely white and has the typical grill streaks 3. Then turn and add a pinch of salt to the cooked part. Meanwhile, cook the other side for the same amount of time. It will take about two minutes, but the time may vary depending on the thickness of the chicken fillets, so don't poke the meat with the fork tines or the juices will come out and the chicken will be too dry. When the meat is well cooked, remove it from the grill and season it with salt immediately, so the heat will melt the salt. Place the chicken breasts on a plate and let them cool.
In the meantime, clean the vegetables: take the pepper and remove the inner seeds, then cut it into julienne 4, peel and trim the carrots and cut them into strips too 5. Slice the celery ribs 6,
gherkins 7 and pitted green olives 8 crosswise. And finally cut the cheese (Gruyere or Edam cheese) into sticks 9.
In the meantime the meat will have cooled down, cut it into strips 10 and prepare the salad dressing: put the mayonnaise in a bowl, add the mustard 11, white wine vinegar 12, salt and pepper.
Finally, pour in the olive oil to blend the ingredients 13. Mix and set aside 14. Now take a large bowl, pour in the chicken and all the previously cut vegetables: peppers 15,
celery 16, carrots, cucumbers, cheese, olives 17 and give a first stir 18
and then season with the dressing 19, stir and cover with plastic wrap 20; let it rest in the fridge for at least an hour. After this time the flavors will have blended thoroughly and you can enjoy your tasty chicken salad 21.
You can keep your tasty chicken salad for up to 1 day, keeping it well covered with plastic wrap. Freezing is not recommended.
You can substitute the vegetables with your favorite ones, e.g. peppers with zucchini or, in winter, with raw artichokes or lightly blanched potato or pumpkin chunks. If you do not like mayonnaise you can replace it with creamy white yogurt. In this recipe we used white celery but you can also use green celery. Just remember to remove the outer part with a vegetable peeler because this type of celery is more stringy.
