To prepare the stuffed figs covered in chocolate, start by opening the back of the fig and stuffing it with a walnut half 1, a hazelnut 2, or an almond. Close it 3 and continue in the same way with all the others.
Melt 7 oz of dark chocolate in the microwave (or bain-marie) at 113°F 4. Once melted, add the remaining 3.5 oz of chocolate to the bowl 5 and mix well. With wide movements of the spatula, cool the chocolate down to 84-86°F. At this point, dip the stuffed figs one at a time 6
