Really, the magic is in the contrast: the tender fruit, the silky cheese, and then there's this bold spicy cherry sauce adding a tangy and spicy kick. If you love fruit and cheese together, you've gotta try this. And the cherry sauce? It brings a bit of heat and zing—so so good. Oh, and do not miss out on the pistachios—they add a nice crunchy texture, rounding out the salty, sweet, and spicy combo.

How to prepare Robiola-stuffed peaches with spicy cherry sauce
To prepare the robiola-stuffed peaches with spicy cherry sauce, start by preparing the sauce. Wash the cherries, remove the pits and stems, and cut them in half 1. Also chop the fresh chili pepper 2 and place it with all its seeds in a saucepan, along with the cherries 3.
Add the sugar 4, then squeeze the lemon 5 and add the juice to the saucepan 6.
Stir, and let the sauce simmer gently for about 10 minutes 7. Blend the sauce with an immersion blender 8, and strain it through a sieve 9
and place it in the fridge to cool for at least a couple of hours 10. You can get ahead by preparing the sauce a few days in advance, storing it in the fridge in an airtight container. Then move on to the peaches: cut them in half along the seam 11 and remove the pits 12.
In a small bowl, combine the oil and salt 13, dip a kitchen brush and brush the emulsion on the cut side of the peaches 14. Heat a grill pan, and when it's nice and hot, grill the peaches on the cut side 15 for 3-4 minutes.
When the peaches are ready, set them aside 16. In a small bowl, place the robiola, well chilled from the fridge, and mash it slightly with a spoon to make it creamy. Use an ice cream scoop to take a ball of robiola 17 and fill a peach half, which you will have placed on the dessert plate 18.
Take the cherry sauce, place it in a squeeze bottle to facilitate the operation, and drizzle about a quarter onto the plate 19. Finally, sprinkle with a quarter of the chopped pistachios 20 and complete the dish with a whole cherry 21. Repeat the same procedure with the other portions: your stuffed peaches are ready to be enjoyed!
